Ingredients

  • 1 cup Carob powder
  • 1 cup Rolled oats
  • 0.5 cup Shredded unsweetened coconut
  • 0.5 cup Raw almonds
  • 10 pieces Dates, pitted
  • 0.5 cup Peanut butter (or any nut butter of choice)
  • 0.25 cup Honey (or maple syrup for a vegan option)
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Sea salt

Directions

Step 1

In a food processor, combine the raw almonds, rolled oats, and shredded coconut. Pulse until the mixture is ground into a coarse meal-like texture.

Step 2

Add the pitted dates, carob powder, peanut butter, honey (or maple syrup), vanilla extract, and sea salt to the food processor.

Step 3

Process everything together until the mixture becomes sticky and holds together when pressed between your fingers. If the mixture is too dry, add a tablespoon of water and process again until the desired consistency is reached.

Step 4

Scoop out a heaping tablespoon of the mixture and roll it between your hands to form a smooth ball. Repeat with the remaining mixture until all the carob balls are formed.

Step 5

Optional: Roll the carob balls in extra shredded coconut or carob powder for an added layer of flavor and presentation.

Step 6

Place the carob balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.

Step 7

Store the carob balls in an airtight container in the refrigerator for up to two weeks, or freeze them for up to three months.
