Ingredients

  • 3 tablespoons carob powder
  • 1 cup rolled oats
  • 8 pieces medjool dates (pitted)
  • 3 tablespoons almond butter
  • 2 tablespoons honey (or maple syrup for vegan option)
  • 1 cup shredded coconut (unsweetened)
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon sea salt
  • 1 tablespoon water
  • 0.5 cup extra shredded coconut (for rolling)

Directions

Step 1

Add rolled oats to a food processor and pulse until they reach a fine, flour-like texture.

Step 2

Add carob powder, pitted dates, almond butter, honey (or maple syrup), shredded coconut, vanilla extract, and sea salt to the food processor.

Step 3

Pulse the mixture until everything is well-combined and forms a sticky dough. If the mixture is too dry, add 1 tablespoon of water and pulse again.

Step 4

Scoop out small portions of the dough (about 1 tablespoon each) and roll them into balls using your hands.

Step 5

Place the extra shredded coconut in a shallow bowl and roll each ball in the coconut until evenly coated.

Step 6

Transfer the carob balls to an airtight container and refrigerate for at least 30 minutes to firm up before serving.

Step 7

Store in the refrigerator for up to 1 week or in the freezer for up to 1 month.
