Ingredients

  • 3 lbs pork shoulder
  • 1 tbsp salt
  • 1 tsp pepper
  • 1 tbsp paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 4 garlic cloves, minced
  • 1 cup orange juice
  • 2 tbsp vegetable oil
  • 6 large flour tortillas
  • 3 cups cooked white rice
  • 2 cups black beans, drained and rinsed
  • 1 cup salsa
  • 0.5 cup fresh cilantro, chopped
  • 2 lime wedges
  • 2 avocado, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

In a small bowl, mix together the salt, pepper, paprika, cumin, and oregano. Rub this spice mixture all over the pork shoulder.

Step 3

Place the pork shoulder in a large oven-proof pot or Dutch oven. Add the minced garlic, orange juice, and vegetable oil to the pot.

Cover the pot with a lid or aluminum foil and roast in the preheated oven for about 3 hours, or until the pork is tender and easy to shred.

Once done, remove the pork from the oven and let it cool slightly. Shred the meat using two forks.
