  • 2 Roma tomatoes, diced
  • 1 medium Bell pepper, diced
  • 1 cup Beef broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 tablespoon Lime juice
  • 2 tablespoons Fresh cilantro, chopped (for garnish)
  • 6 Corn or flour tortillas (for serving)

Directions

Step 1

Season the beef chuck roast with 2 teaspoons of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder. Rub the seasoning into the meat thoroughly.

Step 2

Heat 2 tablespoons of vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side.

Step 3

Remove the beef from the pot and set aside. Lower the heat to medium and add the diced onion, minced garlic, and jalapeño (if using) to the pot. Cook for 3-4 minutes until softened and fragrant.
