  • 2 tablespoons Olive oil

  • 1 teaspoon Adobo seasoning
  • 4 Garlic cloves, minced
  • 0.5 cup Sofrito (Puerto Rican cooking base)
  • 1 cup Tomato sauce
  • 2 cups Beef broth
  • 2 medium Russet potatoes, cubed
  • 2 medium Carrots, peeled and sliced
  • 1 medium Green bell pepper, chopped
  • 2 Bay leaves
  • 0.25 cup Cilantro, chopped (optional for garnish)
  • 1 cup Water

Directions

Step 1

Season the beef cubes with salt, black pepper, and adobo seasoning. Set aside.

Step 2

In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat.

Add the beef to the pot in batches, browning the pieces on all sides to develop flavor. Remove the browned beef and set aside.

In the same pot, lower the heat to medium and add the sofrito and minced garlic. Sauté for 2-3 minutes until fragrant.
