Ingredients

  • 1.5 pounds Beef sirloin, thinly sliced
  • 6 slices Bacon, chopped
  • 8 pieces Tomatillos, husked and rinsed
  • 3 pieces Garlic cloves
  • 0.5 cups White onion, chopped
  • 0.5 cups Cilantro, chopped
  • 1 piece Jalapeño, seeded and chopped
  • 4 cups Beef broth
  • 2 cups Cooked pinto beans
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 4 pieces Lime wedges
  • 0.5 cups Diced white onion
  • 0.5 cups Chopped cilantro
  • 8 pieces Corn tortillas

Directions

Step 1

Heat a large pot or Dutch oven over medium heat and cook the chopped bacon until it becomes crispy. Remove the bacon with a slotted spoon and set it aside, leaving the rendered fat in the pot.

Step 2

Add the thinly sliced beef sirloin to the pot with the bacon fat. Season with salt and black pepper. Cook the beef, stirring occasionally, until it is fully browned and releases its juices. Reduce the heat to low and let it simmer.

Step 3

While the beef cooks, prepare the tomatillo sauce. In a blender, combine the tomatillos, garlic cloves, chopped white onion, chopped cilantro, and chopped jalapeño. Blend until smooth.

Step 4

Pour the blended tomatillo sauce into the pot with the beef. Stir well to combine. Add the beef broth and bring the mixture to a simmer.

Step 5

Cover the pot and let the mixture simmer for about 25 minutes, allowing the flavors to meld and the beef to become tender.

Step 6

After 25 minutes, stir in the cooked pinto beans. Let the mixture cook for an additional 5 minutes to heat the beans through.

Step 7

Taste and adjust the seasoning with additional salt and pepper, if necessary.

Step 8

To serve, ladle the Carne En Su Jugo into bowls. Garnish each bowl with a sprinkle of the reserved crispy bacon, diced white onion, and chopped cilantro.

Step 9

Serve with lime wedges on the side and warm corn tortillas for dipping.
