Ingredients

  • 2 lb Pork loin or shoulder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 2 tbsp Olive oil
  • 1 medium White onion, chopped
  • 4 cloves Garlic cloves, minced
  • 14 oz Diced tomatoes (canned or fresh)
  • 2 tbsp Tomato paste
  • 1 cup Chicken broth
  • 1 leaf Bay leaf
  • 0.25 cup Fresh cilantro, chopped
  • 1 tbsp Lime juice
  • 1 unit Optional: Jalapeño, diced

Directions

Step 1

Trim any excess fat from the pork loin or shoulder and cut it into thin strips, about 2 inches long.

Step 2

In a large bowl, season the pork strips with salt, black pepper, ground cumin, and paprika. Toss to coat evenly.

Step 3

Heat olive oil in a large skillet or Dutch oven over medium-high heat.

Step 4

Working in batches if necessary, add the pork strips to the pan in a single layer without overcrowding. Brown the pork on all sides, about 2-3 minutes per side. Remove the browned pork from the pan and set aside.

Step 5

In the same pan, add the chopped onion and sauté for 3-4 minutes until softened and translucent. Add the minced garlic and optional diced jalapeño, and cook for an additional minute until fragrant.

Step 6

Stir in the diced tomatoes, tomato paste, and chicken broth. Mix well to combine and bring the mixture to a simmer.

Step 7

Return the browned pork strips to the pan, nestling them into the sauce. Add the bay leaf.

Step 8

Reduce the heat to low, cover the pan, and let the pork simmer gently for 35-40 minutes, stirring occasionally, until the meat is tender and has absorbed the flavors of the sauce.

Step 9

Remove the bay leaf and stir in the chopped cilantro and lime juice. Adjust seasoning with additional salt and pepper, if needed.

Step 10

Serve hot with rice, warm tortillas, or your favorite side dish. Garnish with extra cilantro, if desired.
