Ingredients

  • 500 grams beef sirloin
  • 3 tablespoons olive oil
  • 5 whole garlic cloves
  • 120 milliliters dry white wine
  • 1 teaspoon sweet paprika
  • 1 medium (finely chopped) onion
  • 200 milliliters beef stock
  • 2 tablespoons (chopped) fresh parsley
  • 2 whole bay leaves
  • 1 to taste salt
  • 1 to taste black pepper

Directions

Step 1

1. Slice the beef sirloin into thin strips, about 1 cm wide, and season them with salt and pepper to taste.

Step 2

2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the beef strips in batches to avoid overcrowding the pan, cooking for 2-3 minutes per batch until browned. Transfer to a plate and set aside.

Step 3

3. Lower the heat to medium and add the remaining tablespoon of olive oil to the skillet. Add the chopped onion and sauté for 5-7 minutes until softened and slightly golden.

Step 4

4. Add the whole garlic cloves and bay leaves to the skillet, cooking for another 2 minutes until fragrant.

Step 5

5. Stir in the sweet paprika, followed by the dry white wine. Allow the mixture to simmer for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.

Step 6

6. Pour in the beef stock and return the seared beef strips to the skillet. Stir everything together, lower the heat to a gentle simmer, cover with a lid, and cook for 15 minutes.

Step 7

7. Remove the lid and allow the sauce to reduce slightly for another 5-7 minutes until it thickens to your desired consistency. Adjust seasoning with more salt and pepper if needed.

Step 8

8. Sprinkle the chopped parsley over the dish and remove the bay leaves before serving.

Step 9

9. Serve hot with crusty bread, roasted potatoes, or a side of steamed vegetables for a complete meal.
