Ingredients

  • 1 lb Fresh raw shrimp (peeled, deveined, and diced)
  • 1 cup Fresh lime juice (from about 8-10 limes)
  • 0.25 cup Fresh lemon juice (from about 2 lemons)
  • 0.5 cup Red onion (finely diced)
  • 1 cup Roma tomatoes (diced)
  • 1 English cucumber (diced)
  • 0.5 cup Fresh cilantro (chopped)
  • 1 Jalapeño (seeded and finely minced)
  • 1 tsp Salt
  • 1 Avocado (cubed)
  • 0 (optional) Tortilla chips (for serving)

Directions

Step 1

Place the diced shrimp in a large glass or ceramic bowl. Pour the lime juice and lemon juice over the shrimp, ensuring they are fully submerged.

Step 2

Cover the bowl with plastic wrap and refrigerate for 30 minutes. The acidity from the citrus will 'cook' the shrimp, turning them opaque and firm.

Step 3

While the shrimp marinates, prepare the vegetables. Finely dice the red onion, Roma tomatoes, and cucumber. Mince the jalapeño, and chop the cilantro. Set these ingredients aside.

Step 4

After 30 minutes, check that the shrimp are fully cooked by ensuring they are no longer translucent. Drain off about half of the citrus juice, leaving enough to keep the mixture moist and flavorful.

Step 5

Add the diced red onion, tomatoes, cucumber, cilantro, jalapeño, and salt to the bowl with the shrimp. Gently toss to combine.

Step 6

If desired, fold in the cubed avocado for a creamy texture and added richness.

Step 7

Taste and adjust seasoning as needed, adding more salt or lime juice if preferred.

Step 8

Serve chilled with tortilla chips or enjoy on its own as a light and refreshing appetizer or meal.
