Ingredients

  • 16 oz rigatoni pasta
  • 2 large chicken breast
  • 2 tbsp olive oil
  • 1 medium yellow onion
  • 3 garlic cloves
  • 8 oz cremini mushrooms
  • 1 cup sun-dried tomatoes (oil-packed)
  • 2 tbsp balsamic vinegar
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp unsalted butter
  • 2 tbsp fresh parsley
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rigatoni pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 2

Slice the chicken breasts into thin strips. Season lightly with salt and pepper.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken strips for 4-5 minutes per side until golden and fully cooked. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the onion, thinly sliced, and sauté over medium heat until softened and caramelized, about 7-8 minutes.

Step 5

Mince the garlic cloves and add them to the onions. Cook for 1 more minute until fragrant.

Step 6

Slice the cremini mushrooms thinly and add them to the skillet. Cook until they release their moisture and turn golden, about 5 minutes.

Step 7

Chop the sun-dried tomatoes into small pieces and add them to the skillet. Stir in the balsamic vinegar and cook for 1 minute to deglaze the pan.

Step 8

Reduce the heat to low and stir in the heavy cream. Allow the sauce to simmer for 2-3 minutes, then fold in the butter and grated Parmesan cheese, stirring until melted and combined.

Step 9

Add the cooked chicken strips and the rigatoni pasta to the skillet. Toss everything together to coat in the sauce, adding reserved pasta water a little at a time if needed to adjust the sauce's consistency.

Step 10

Season the dish with additional salt and black pepper to taste. Sprinkle with chopped fresh parsley for garnish.

Step 11

Serve warm and enjoy your homemade Carmela's Chicken Rigatoni!
