Ingredients

  • 4 pieces white fish fillets (such as cod or haddock)
  • 3 tablespoons extra virgin olive oil

  • 3 tablespoons fresh lemon juice
  • 2 tablespoons capers, drained
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 0.25 cup dry white wine
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper, freshly ground
  • 1 cup couscous
  • 1.25 cups chicken or vegetable stock
  • 0.5 teaspoons garlic powder
  • 0.25 teaspoons dried thyme

Directions

Step 1

Pat the fish fillets dry with a paper towel and season both sides with salt and black pepper.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

Place the fish fillets in the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the fish from the skillet and set aside on a plate covered with foil to keep warm.
