Ingredients

  • 250 grams dried black peas (also known as parched peas or maple peas)
  • 1 liter water
  • 1 teaspoon bicarbonate of soda (baking soda)
  • 20 grams butter
  • 1 teaspoon coarse sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons (optional) vinegar (malt or apple cider, for serving)

Directions

Step 1

Rinse the dried black peas thoroughly under cold running water to remove any debris.

Step 2

Place the black peas in a large bowl or pot and cover them with water. Add 1 teaspoon of bicarbonate of soda to help the peas soften. Soak overnight for at least 8-10 hours.

Step 3

After soaking, drain and rinse the black peas well.

Step 4

Transfer the peas to a large pot and add about 1 liter of fresh water. Bring the pot to a boil over medium-high heat.

Once boiling, reduce the heat to low and simmer uncovered for approximately 1.5 to 2 hours, or until the peas are soft but still hold their shape. Stir occasionally and skim off any foam that rises to the surface.

Drain the cooked black peas and return them to the pot.

Add butter, coarse sea salt, and freshly ground black pepper to the peas while they are still warm. Stir gently until the butter melts and coats the peas evenly.
