Ingredients

  • 2 pounds Ground turkey
  • 1 cup Breadcrumbs
  • 2 large Eggs
  • 1 medium, grated Carrot
  • 1 medium, grated Zucchini
  • 1 small, finely chopped Onion
  • 2 cloves, minced Garlic
  • 1 tablespoon Worcestershire sauce
  • 1 cup, divided Ketchup
  • 1 teaspoon Dried parsley
  • 0.5 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal of the turkey loaf.

Step 2

In a large mixing bowl, combine the ground turkey, breadcrumbs, eggs, grated carrot, grated zucchini, chopped onion, and minced garlic.

Step 3

Add the Worcestershire sauce, 1/2 cup of ketchup, dried parsley, dried oregano, salt, and black pepper to the mixture.

Step 4

Using clean hands or a large spoon, gently mix all the ingredients until just combined. Be careful not to overmix, as this can lead to a dense loaf.

Step 5

Transfer the turkey mixture into the prepared loaf pan, pressing it down evenly to form a loaf shape.

Step 6

Spread the remaining 1/2 cup of ketchup evenly over the top of the loaf for a glossy glaze.

Step 7

Place the loaf pan in the preheated oven and bake for 60 minutes, or until the internal temperature of the loaf reaches 165°F (74°C) when measured with a meat thermometer.

Step 8

Once cooked, remove the loaf from the oven and let it rest in the pan for 5-10 minutes before slicing.

Step 9

Serve warm with your favorite sides, such as mashed potatoes or steamed vegetables.
