Ingredients

  • 16 oz fresh spinach
  • 3 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1.5 cups whole milk
  • 0.5 cups grated Parmesan cheese
  • 2 cloves minced garlic
  • 0.25 tsp ground nutmeg
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Wash the spinach thoroughly and remove any tough stems.

Step 2

Bring a large pot of water to boil. Add the spinach and blanch for 30 seconds. Immediately transfer the spinach to a bowl of ice water to stop the cooking process.

Step 3

Drain the spinach well, squeezing out excess water. Roughly chop the spinach and set aside.

Step 4

In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

Step 5

Sprinkle the flour over the butter and garlic mixture, whisking constantly to form a roux. Cook for 1-2 minutes, stirring continuously, until the flour loses its raw taste.

Step 6

Gradually pour in the milk, whisking constantly to create a smooth sauce. Cook for 3-4 minutes, stirring constantly, until the mixture thickens.

Step 7

Stir in the grated Parmesan cheese, ground nutmeg, salt, and black pepper. Mix until the cheese is melted and the sauce is smooth.

Step 8

Add the chopped spinach to the skillet, stirring to coat it evenly with the sauce. Cook for 2-3 minutes until the spinach is warmed through and well combined with the sauce.

Step 9

Taste and adjust seasoning as needed. Serve hot as a side dish to your favorite main course.
