Heat the vegetable oil in a large pot over medium heat.
Season the chicken thighs with a pinch of salt and pepper, then cook them in the pot until browned on both sides. Remove and set aside.
In the same pot, add the diced onion and sauté until softened, about 5 minutes.
Add the minced garlic and grated ginger, cooking for 1 minute until fragrant.
