  • 1 liter vegetable or chicken stock
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 tablespoon lime juice
  • 2 tablespoons chopped fresh cilantro (for garnish)
  • 2 tablespoons roasted peanuts (chopped, for garnish)

Directions

Step 1

Heat the vegetable oil in a large pot over medium heat.

Season the chicken thighs with a pinch of salt and pepper, then cook them in the pot until browned on both sides. Remove and set aside.

In the same pot, add the diced onion and sauté until softened, about 5 minutes.
