Ingredients

  • 400 grams Extra-firm tofu
  • 1 medium Red bell pepper
  • 1 medium Yellow bell pepper
  • 1 medium Zucchini
  • 1 medium Red onion
  • 12 pieces Cherry tomatoes
  • 3 tablespoons Olive oil
  • 2 tablespoons Soy sauce
  • 2 tablespoons Lemon juice
  • 2 pieces Garlic cloves (minced)
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Salt
  • 6 pieces Wooden or metal skewers

Directions

Step 1

Press the tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel or paper towels, place it on a plate, and set a heavy object on top. Let it press for 15-20 minutes.

While the tofu is pressing, soak the wooden skewers in water to prevent them from burning on the grill. (Skip this step if using metal skewers.)

Cut the pressed tofu into 1-inch cubes and set aside.

Prepare the vegetables: Cut the red and yellow bell peppers, zucchini, and red onion into 1-inch pieces. Leave the cherry tomatoes whole.
