  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground allspice
  • 1 small scotch bonnet pepper (optional, finely chopped)
  • 2 tablespoons vegetable oil
  • 4 sprigs fresh thyme
  • 1 medium lime (juice only)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro (chopped, for garnish)

Directions

Step 1

Heat the vegetable oil in a large, heavy-bottomed pot over medium heat.
