Ingredients

  • 4 pieces chicken breasts
  • 2 tablespoons lime juice
  • 2 tablespoons orange juice
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 teaspoon ground allspice
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon smoked paprika
  • 0.25 teaspoon cayenne pepper
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 pieces scallions
  • 1 piece red chili (optional)

Directions

Step 1

In a large bowl, combine lime juice, orange juice, olive oil, minced garlic, ground allspice, ground cinnamon, smoked paprika, cayenne pepper, brown sugar, soy sauce, fresh thyme, salt, and black pepper. Mix well to create the marinade.

Step 2

Finely chop the scallions and optional red chili, and stir them into the marinade.

Step 3

Place the chicken breasts in the bowl with the marinade. Make sure they are fully coated. Cover the bowl and refrigerate for at least 1 hour, or ideally overnight for deeper flavor.

Step 4

Preheat a grill, grill pan, or skillet over medium-high heat.

Step 5

Remove the chicken breasts from the marinade, allowing excess marinade to drip off but reserving it for basting.

Step 6

Cook the chicken breasts on the preheated grill or pan for 5-6 minutes per side, or until the internal temperature reaches 165°F (75°C). Baste with the reserved marinade during cooking for added flavor.

Step 7

Remove the chicken from the heat and let it rest for 5 minutes before serving.

Step 8

Serve warm with your favorite side dishes, such as rice, plantains, or a fresh salad.
