Ingredients

  • 4 ears fresh corn on the cob
  • 3 tablespoons unsalted butter
  • 2 tablespoons coconut milk
  • 1 teaspoon ground allspice
  • 1 teaspoon paprika
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 0.5 teaspoons chili powder
  • 0.5 teaspoons salt
  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro
  • 1 tablespoon grated coconut (optional)

Directions

Step 1

Preheat your grill to medium-high heat or set your oven to broil if grilling is not an option.

Step 2

Peel back the husks of the corn without detaching them completely and remove the silk strands from each ear of corn. Fold the husks back up and soak the corn in cold water for 10 minutes. This prevents the husks from burning while grilling.

Step 3

While the corn is soaking, prepare the spiced butter. In a small saucepan, melt the unsalted butter over low heat.

Step 4

Stir in the coconut milk, ground allspice, paprika, ground cinnamon, ground nutmeg, chili powder, and salt. Mix until all the spices are well combined. Remove the spiced butter from heat.

Step 5

Remove the corn from the water and pat dry. Brush the spiced butter generously onto the ears of corn, ensuring full coverage.

Step 6

Place the corn on the preheated grill or under the broiler. Cook for 10-15 minutes, turning occasionally, until the kernels are tender and lightly charred.

Step 7

Remove the corn from the heat and drizzle with fresh lime juice. Sprinkle with freshly chopped cilantro and, if desired, grated coconut for an extra tropical touch.

Step 8

Serve hot as a flavorful side dish or snack.
