Ingredients

  • 4 pieces (6 oz each) Salmon fillets (skin-on or skinless)

  • 1.5 tsp Salt
  • 1 tsp Ground black pepper
  • 3 tbsp Guava paste
  • 0.5 cup Ketchup
  • 1 tbsp Soy sauce
  • 1 tbsp Apple cider vinegar
  • 2 tbsp Honey
  • 2 cloves Garlic (minced)
  • 1 large Ripe mango (diced)
  • 1 medium Red bell pepper (diced)
  • 0.5 cup Red onion (finely chopped)
  • 1 small Cucumber (diced)
  • 2 tbsp Fresh cilantro (chopped)
  • 2 tbsp Lime juice
  • 1 optional Jalapeño (seeded and minced)

Directions

Step 1

Preheat your grill or stovetop grill pan to medium-high heat.

Step 2

Pat the salmon fillets dry with paper towels and drizzle with olive oil. Sprinkle with 1 teaspoon of salt and 1 teaspoon of ground black pepper.

Step 3

In a small saucepan over medium heat, combine the guava paste, ketchup, soy sauce, apple cider vinegar, honey, and minced garlic. Stir until the guava paste melts and the mixture becomes smooth, about 3-4 minutes. Remove from heat and set aside.
