Ingredients

  • 2 cups Jasmine or Basmati rice
  • 1 cup Coconut milk
  • 1 cup Water
  • 2 stalks Scallions (green onions), finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, finely grated
  • 1 teaspoon Thyme (preferably fresh)
  • 0.5 teaspoons Allspice powder
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Vegetable oil or coconut oil
  • 0.5 cup Red bell pepper, diced
  • 0.5 cup Frozen peas

Directions

Step 1

Rinse the rice under cold water in a fine-mesh sieve until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky.

Step 2

In a small skillet, heat the vegetable or coconut oil over medium heat. Add the scallions, garlic, and ginger, and sauté for 1-2 minutes until fragrant.

Step 3

Add the sautéed mixture, rice, coconut milk, water, thyme, allspice, salt, and black pepper to your rice cooker. Stir everything together to combine.

Step 4

Gently layer the diced red bell pepper and frozen peas on top of the rice mixture without stirring. This ensures the vegetables steam properly during cooking.

Step 5

Close the lid of the rice cooker and select the 'white rice' or standard cooking setting, depending on your model. Allow the rice to cook completely (approximately 25-30 minutes).

Step 6

Once the rice cooker finishes and switches to the 'warm' setting, let the rice sit covered for an additional 5 minutes to absorb the remaining steam.

Step 7

Fluff the rice gently with a fork, mixing in the red bell pepper and peas evenly throughout the dish.

Step 8

Serve warm as a side dish to your favorite Caribbean-inspired entrees or as a light, standalone meal. Enjoy!
