Ingredients

  • 1 lb pork tenderloin
  • 2 cups pineapple chunks
  • 1 red bell pepper
  • 1 small red onion
  • 3 tbsp olive oil
  • 3 tbsp lime juice
  • 4 tbsp orange juice
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp ground allspice
  • 1 tsp dried thyme
  • 0.5 tsp ground black pepper
  • 1 mango (optional), cut into chunks
  • 8 skewers

Directions

Step 1

Cut the pork tenderloin into 1-inch cubes and place in a large bowl.

Step 2

In a separate small bowl, whisk together olive oil, lime juice, orange juice, soy sauce, brown sugar, minced garlic, grated ginger, ground allspice, dried thyme, and ground black pepper to create the marinade.

Step 3

Pour the marinade over the pork cubes. Toss to coat evenly, cover the bowl, and refrigerate for at least 1 hour (preferably 2-3 hours for maximum flavor).

Step 4

While the pork marinates, soak wooden skewers in water for at least 30 minutes to prevent burning on the grill.

Step 5

Prepare the veggies and fruit: cut the red bell pepper and red onion into 1-inch pieces. If using mango, cut it into chunks similar in size to the pineapple.

Step 6

Preheat your grill to medium-high heat. If using a grill pan, lightly oil the surface to prevent sticking.

Step 7

Assemble the kabobs by threading the marinated pork, pineapple chunks, bell pepper pieces, red onion, and optional mango onto the skewers, alternating between ingredients for variety and color.

Step 8

Place the kabobs on the preheated grill. Cook for 12-15 minutes, turning frequently, until the pork is cooked through (internal temperature should reach 145°F - 150°F).

Step 9

Remove the kabobs from the grill and let them rest for 3-5 minutes before serving.

Step 10

Serve warm, garnished with fresh herbs or additional lime wedges if desired. Pair with rice, salad, or grilled vegetables for a complete meal.
