Ingredients

  • 4 pieces pork chops (bone-in or boneless)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon ground allspice
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 cup coconut milk
  • 1 large ripe banana, sliced
  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • 0.25 teaspoon red chili flakes (optional)
  • 4 servings rice or plantains (for serving, optional)

Directions

Step 1

Season the pork chops on both sides with salt, black pepper, and ground allspice.

Step 2

Heat olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear for 3-4 minutes on each side until golden brown. Remove and set aside.

Step 3

In the same skillet, reduce the heat to medium and add the chopped onion. Sauté for 2-3 minutes until softened.

Step 4

Add the minced garlic and grated ginger to the skillet and cook for another minute until fragrant.

Step 5

Pour in the coconut milk and stir to combine, scraping up any browned bits from the bottom of the skillet.

Step 6

Add the sliced banana to the skillet, stirring gently to avoid breaking the slices. Let the sauce come to a simmer.

Step 7

Return the seared pork chops to the skillet. Reduce the heat to low, cover, and let simmer for 10-12 minutes, or until the pork chops are fully cooked and tender.

Step 8

Stir in the fresh lime juice and sprinkle with red chili flakes (if using) for a hint of spice.

Step 9

Garnish the dish with freshly chopped cilantro and serve hot with steamed rice or fried plantains for a complete Caribbean-inspired meal.
