  • 0.5 tsp Black pepper
  • 1 cup Long-grain rice
  • 1 cup Coconut milk
  • 1 cup Water
  • 1 cup Pineapple, diced
  • 0.5 cup Red bell pepper, diced
  • 0.25 cup Red onion, finely chopped
  • 2 tbsp Cilantro, chopped
  • 1 tbsp Lime juice
  • 0.5 cup Greek yogurt
  • 1 tsp Lime zest

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

In a small bowl, mix together the allspice, paprika, cumin, garlic powder, cayenne pepper, salt, and black pepper.

Rub the pork tenderloin with olive oil and generously coat it with the spice mixture.

Heat a large oven-safe skillet over medium-high heat and sear the pork on all sides until browned, approximately 2-3 minutes per side.
