Ingredients

  • 1 lb pork tenderloin
  • 1 mango
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 3 garlic cloves
  • 1 tbsp fresh ginger
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 2 tbsp vegetable oil
  • 2 scallions
  • 0.25 cup fresh cilantro
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 4 cups optional cooked rice or noodles

Directions

Step 1

Thinly slice the pork tenderloin into bite-sized strips and season with salt and black pepper.

Step 2

Peel and cube the mango into small pieces. Deseed and slice the red and yellow bell peppers into thin strips. Thinly slice the red onion and chop the scallions. Mince the garlic and grate the ginger.

Step 3

In a small bowl, mix together the soy sauce, lime juice, and honey to create the sauce. Set it aside.

Step 4

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the pork strips and stir fry for 4-5 minutes until browned and cooked through. Remove the pork from the pan and set it aside.

In the same skillet, add the remaining tablespoon of vegetable oil. Stir fry the red onion, garlic, ginger, and bell peppers for 2-3 minutes until slightly softened.
