Ingredients

  • 500 grams ground beef
  • 250 grams ground pork
  • 120 grams breadcrumbs
  • 1 large egg
  • 2 stalks green onions, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon allspice
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 240 milliliters pineapple juice
  • 3 tablespoons ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons vegetable oil
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2

In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, egg, green onions, garlic, ginger, allspice, paprika, cayenne pepper, soy sauce, and lime juice. Mix until just combined, being careful not to overmix.

Step 3

Form the mixture into small meatballs, about 1 1/2 inches in diameter, and place them on the prepared baking sheet.

Step 4

Bake the meatballs for 18-20 minutes, or until cooked through and golden brown.

Step 5

While the meatballs bake, prepare the Caribbean glaze. In a small saucepan, combine pineapple juice, ketchup, and brown sugar over medium heat. Stir well and bring to a simmer.

Step 6

In a small bowl, mix cornstarch and water to create a slurry. Slowly pour the slurry into the saucepan while stirring continuously. Simmer for 2-3 minutes until the sauce thickens.

Step 7

Heat vegetable oil in a large skillet over medium heat. Add the cooked meatballs to the skillet and pour the prepared glaze over them. Toss the meatballs gently to coat them evenly in the sauce.

Step 8

Cook for an additional 2-3 minutes, allowing the sauce to caramelize slightly around the meatballs.

Step 9

Transfer the meatballs to a serving dish, garnish with fresh cilantro, and serve warm. Enjoy your Caribbean Meatballs!
