Ingredients

  • 4 pieces Pork chops (bone-in or boneless)
  • 3 tablespoons Olive oil
  • 3 cloves Garlic cloves (minced)
  • 2 tablespoons Fresh thyme (leaves only)
  • 2 stalks Scallions (chopped)
  • 2 tablespoons Lime juice
  • 2 tablespoons Soy sauce
  • 2 teaspoons Brown sugar
  • 1 teaspoon Ground allspice
  • 0.5 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 1 teaspoon Ground ginger
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Directions

Step 1

In a blender or food processor, combine olive oil, minced garlic, fresh thyme, chopped scallions, lime juice, soy sauce, brown sugar, ground allspice, cinnamon, nutmeg, ginger, cayenne pepper, salt, and black pepper. Blend until the mixture forms a smooth marinade.

Step 2

Place the pork chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork chops, ensuring they are evenly coated. Seal the bag or cover the dish with plastic wrap, and refrigerate for at least 2 hours or up to overnight for optimal flavor.

Step 3

When ready to cook, preheat an outdoor grill or stovetop grill pan over medium-high heat. Lightly oil the grates or pan to prevent sticking.

Step 4

Remove the pork chops from the marinade, allowing any excess to drip off, and discard the remaining marinade.

Step 5

Place the pork chops on the preheated grill or grill pan. Cook for approximately 4-5 minutes per side, or until the internal temperature reaches 145°F (63°C) when tested with a meat thermometer.

Step 6

Once cooked, transfer the pork chops to a plate and tent with aluminum foil. Let them rest for 5 minutes to allow the juices to redistribute.

Step 7

Serve the Caribbean jerk pork chops hot, garnished with additional thyme or scallions if desired. Pair with rice, plantains, or a fresh green salad for a complete meal.
