Ingredients

  • 6 whole Scotch bonnet peppers (or habanero peppers)
  • 2 tablespoons Fresh ginger
  • 4 whole Garlic cloves
  • 1 medium Yellow onion
  • 1 large Carrot
  • 1 cup Distilled white vinegar
  • 2 tablespoons Lime juice
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 1 cup Water
  • 1 teaspoon Fresh thyme leaves

Directions

Step 1

Wash and dry all produce. Remove the stems from the Scotch bonnet peppers (use gloves to handle, as they are very hot). Peel and finely chop the ginger and garlic. Chop the onion and carrot into small pieces.

Step 2

In a medium saucepan, combine the Scotch bonnet peppers, ginger, garlic, onion, carrot, white vinegar, and water.

Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low and simmer for 15 minutes until the vegetables are tender.

Remove the saucepan from heat and allow the mixture to cool for about 5 minutes.

Transfer the mixture to a blender. Add lime juice, sugar, salt, and thyme. Blend on high until smooth. If the sauce is too thick, add a small amount of water to reach your desired consistency.
