  • 1 tablespoon Thyme leaves, fresh
  • 1 teaspoon Ground allspice
  • 0.5 teaspoon Ground cinnamon
  • 0.5 teaspoon Nutmeg, freshly grated
  • 1 tablespoon Brown sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 2 tablespoons Cilantro, chopped (for garnish)
  • 4 pieces Lime wedges (for serving)

Directions

Step 1

Rinse the Cornish game hens thoroughly under cool running water and pat them dry with paper towels. Set aside.

Step 2

In a large mixing bowl, prepare the marinade by combining the lime juice, olive oil, garlic, ginger, Scotch bonnet pepper (if using), thyme, allspice, cinnamon, nutmeg, brown sugar, salt, and black pepper.

Rub the marinade generously all over the game hens, making sure to coat the insides as well. Cover the hens and let them marinate in the refrigerator for at least 2 hours, or preferably overnight for maximum flavor.
