Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lime juice
  • 0.25 teaspoon Scotch bonnet pepper (finely minced)
  • 1 tablespoon fresh chives (finely chopped)
  • 1 tablespoon fresh cilantro (finely chopped)
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Place the eggs in a medium-sized saucepan and add enough water to cover them by about 1 inch.

Step 2

Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to low and let the eggs simmer gently for 10 minutes.

Step 3

While the eggs are cooking, prepare a bowl of ice water. Once the eggs are done, transfer them to the ice water to cool completely, about 5-10 minutes.

Step 4

Carefully peel the eggs and slice them in half lengthwise. Scoop out the yolks and place them in a medium mixing bowl. Set the egg whites aside on a serving platter.

Using a fork, mash the yolks until they are crumbly. Add the mayonnaise, Dijon mustard, lime juice, minced Scotch bonnet pepper, chives, cilantro, smoked paprika, salt, and black pepper to the bowl. Mix until smooth and creamy. Taste and adjust seasoning if necessary.
