  • 1 tablespoon brown sugar
  • 2 teaspoons jerk seasoning
  • 2 tablespoons olive oil
  • 1 cup basmati rice
  • 1 cup water
  • 1 cup coconut milk (for rice)
  • 2 stalks scallions (chopped, for garnish)
  • 2 tablespoons cilantro (chopped, for garnish)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. In a medium saucepan, combine the rice, 1 cup of water, and 1 cup of coconut milk. Add a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and allow to sit, covered, for 5 minutes. Fluff with a fork before serving.

While the rice is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the garlic and ginger, and sauté for 1 minute until fragrant.
