  • 2 medium potatoes (peeled and cubed)
  • 2 medium carrots (sliced)
  • 1 can coconut milk (full-fat)
  • 2 cups beef stock
  • 2 tablespoons vegetable oil (for searing)
  • 1 lime lime (juiced)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup cilantro (chopped, for garnish)
  • 4 cups rice (for serving)

Directions

Step 1

Heat 2 tablespoons of vegetable oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.

Season the beef cubes with salt and pepper, then sear them in batches until browned on all sides. Remove the beef and set aside.

In the same pot, add the diced onion and sauté for 3–4 minutes until softened.
