Ingredients

  • 1 pound salted codfish
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 medium red onion
  • 1 cup cherry tomatoes
  • 0.5 cup fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 unit scotch bonnet pepper (seeded and finely chopped)
  • 6 cups water

Directions

Step 1

Rinse the salted codfish under cold running water to remove excess surface salt.

Step 2

Place the salted codfish in a large pot and cover it with 6 cups of water. Bring to a boil over medium-high heat and boil for 15 minutes.

Drain the codfish and repeat the boiling process with fresh water for another 5 minutes to further reduce the salt content.

After boiling, drain the codfish and let it cool. Once cooled, flake the codfish into bite-sized pieces and set aside.
