Ingredients

  • 1 pound raw large shrimp, peeled and deveined

  • 0.5 teaspoon cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 6 cups mixed salad greens
  • 1 large mango, diced
  • 1 large avocado, sliced
  • 1 red bell pepper, thinly sliced
  • 0.25 red onion, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • 0.25 cup toasted almonds or cashews (optional)

Directions

Step 1

In a medium bowl, whisk together the orange juice, lime juice, 1 tablespoon of olive oil, minced garlic, honey, paprika, cumin, salt, and black pepper to create the marinade.

Add the shrimp to the bowl and toss to coat. Cover and marinate in the refrigerator for 15-30 minutes.
