Ingredients

  • 4 pieces Chicken thighs (boneless, skinless)

  • 1 teaspoon Ground cumin

  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Pineapple (fresh, diced)
  • 0.5 cup Red bell pepper (diced)
  • 0.25 cup Red onion (diced)
  • 2 tablespoons Cilantro (chopped)
  • 1 whole Lime (juice)
  • 1 small Jalapeño (optional, finely diced)

Directions

Step 1

In a small bowl, combine garlic powder, paprika, ground cumin, dried thyme, salt, and black pepper to make the spice blend.

Rub chicken thighs on both sides with olive oil, then evenly coat them with the spice blend. Set aside.
