Ingredients

  • 300 g salted cod (saltfish)
  • 2 medium tomatoes
  • 1 medium onion
  • 1 medium sweet bell pepper
  • 2 stalks scallions (green onions)
  • 2 tbsp fresh parsley
  • 3 tbsp olive oil
  • 1 whole lime
  • 0.5 tsp black pepper
  • 0.5 small hot pepper (optional, such as Scotch bonnet or chili)

Directions

Step 1

Rinse the salted cod thoroughly under running water to remove excess salt.

Step 2

Place the salted cod in a pot, cover with water, and bring to a boil. Boil for 5 minutes.

Step 3

Drain the salted cod and repeat the boiling process one or two more times until the saltiness is reduced to your liking.

Step 4

Once the cod has been desalted, drain it and let it cool for a few minutes. Use your hands or a fork to flake it into small pieces and set aside.

Dice the tomatoes, onion, and sweet bell pepper into small pieces. Thinly slice the scallions and chop the parsley finely.
