Ingredients

  • 1.5 pounds Beef stew meat
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Onion, diced
  • 3 cloves Garlic, minced
  • 2 medium Carrots, diced
  • 2 stalks Celery, diced
  • 1 medium Bell pepper, diced
  • 1 cup Cherry tomatoes, halved
  • 2 units Bay leaves
  • 0.5 teaspoon Allspice
  • 1 teaspoon Thyme
  • 1 teaspoon Dried oregano
  • 8 cups Beef broth
  • 0.75 cup Pearl barley
  • 1 medium Sweet potato, peeled and diced
  • 1 cup Frozen green beans
  • 1 tablespoon Lime juice
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the beef stew meat with salt and black pepper.

Step 2

In a large soup pot, heat the olive oil over medium-high heat. Sear the beef in batches until browned on all sides. Remove and set aside.

Step 3

In the same pot, reduce the heat to medium and add the diced onion. Sauté for 3-4 minutes until softened.

Step 4

Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 5

Add the diced carrots, celery, and bell pepper. Sauté for 5 minutes, stirring occasionally.

Step 6

Return the seared beef to the pot and add the cherry tomatoes, bay leaves, allspice, thyme, and oregano. Stir to combine.

Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 45 minutes.

Add the pearl barley to the soup and stir well. Continue simmering uncovered for another 25-30 minutes, or until the barley is tender.

Stir in the diced sweet potato and cook for an additional 15 minutes, or until the sweet potato is tender.

Step 10

Add the frozen green beans and simmer for 5 more minutes.

Step 11

Remove the bay leaves, then stir in the lime juice and fresh parsley.

Taste and adjust seasoning if needed, then serve hot.
