  • 4 leaves Fresh mint leaves (for garnish)

Directions

Step 1

In a small saucepan, combine the raspberries and 30 grams of granulated sugar. Cook over medium heat, stirring occasionally, until the raspberries break down into a syrupy consistency (about 5-7 minutes). Remove from heat and strain the mixture through a fine mesh sieve to remove seeds. Set the raspberry puree aside to cool slightly.

Step 2

In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water. Let it bloom for 5 minutes, then microwave for 10-15 seconds until fully dissolved. Stir to ensure there are no lumps.

Step 3
