Preheat your oven to 325°F (160°C).
In a medium saucepan, combine the heavy cream and ground cardamom. Heat gently over medium-low heat until the cream is steaming but not boiling. Remove from heat and stir in the vanilla extract. Let the mixture cool for 10 minutes to allow the cardamom to infuse.
In a separate mixing bowl, whisk together the egg yolks, granulated sugar, and salt until the mixture is pale and slightly thickened.
Gradually add the warm cream mixture to the egg yolk mixture, whisking constantly to prevent the yolks from cooking.
Strain the mixture through a fine mesh sieve into a clean bowl to remove any cardamom solids or cooked egg pieces.
Divide the custard evenly among four 6-ounce ramekins. Place the ramekins in a deep baking dish and pour hot water into the dish until it reaches halfway up the sides of the ramekins.
Carefully transfer the baking dish to the preheated oven and bake for 40–50 minutes, or until the custards are set but still slightly jiggly in the center when gently shaken.
Remove the ramekins from the water bath and let them cool to room temperature. Once cooled, cover them with plastic wrap and refrigerate for at least 2 hours or up to overnight.
When ready to serve, evenly sprinkle 1/2 to 3/4 teaspoon of turbinado sugar over the surface of each custard. Using a kitchen torch, caramelize the sugar until it melts and forms a crisp, golden-brown crust. Alternatively, place the ramekins on a baking sheet and broil under a preheated broiler for 1-2 minutes, watching closely to prevent burning.
