  • 500 grams all-purpose flour
  • 75 grams granulated sugar
  • 7 grams instant yeast
  • 10 grams ground cardamom
  • 5 grams salt
  • 250 milliliters whole milk
  • 75 grams unsalted butter
  • 1 large egg
  • 1 tablespoon vegetable oil
  • 100 grams brown sugar
  • 50 grams unsalted butter
  • 5 grams ground cardamom
  • 1 large egg
  • 1 tablespoon water

Directions

Step 1

In a small saucepan, melt 75 grams of butter over low heat. Once melted, add 250 milliliters of milk and warm the mixture to around 110°F (43°C).

Step 2

In a large mixing bowl, combine 500 grams of flour, 75 grams of granulated sugar, 7 grams of instant yeast, 10 grams of ground cardamom, and 5 grams of salt.

Step 3

Pour the warm milk and butter mixture into the dry ingredients. Add the large egg. Mix until a soft dough forms.

Step 4

Knead the dough on a lightly floured surface for 8-10 minutes until it becomes smooth and elastic.

Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 to 1.5 hours or until doubled in size.

Step 6

While the dough is rising, prepare the filling by mixing 100 grams of brown sugar, 50 grams of softened butter, and 5 grams of ground cardamom in a bowl. Combine until smooth and set aside.

Step 7

Once the dough has risen, turn it out onto a lightly floured surface and roll it into a rectangle about 30x50 cm.

Spread the cardamom filling evenly over the rolled-out dough rectangle.

Step 9

Fold one third of the dough over the middle and then the other third on top, as if folding a letter.

Roll out the folded dough gently into a rectangle about 20x40 cm.

Cut the dough into 12 strips. Twist each strip and then form it into a bun shape, tucking the ends underneath.

Place the buns onto a baking sheet lined with parchment paper, cover, and let rise for another 30 minutes.

Preheat the oven to 375°F (190°C).

In a small bowl, beat one egg with a tablespoon of water to make an egg wash. Brush each bun with the egg wash.

Bake the buns in the preheated oven for 15-20 minutes or until golden brown.

Step 16

Let the buns cool slightly on a wire rack before serving.
