Ingredients

  • 400 g spaghetti
  • 150 g pancetta
  • 100 g baby bella mushrooms
  • 2 garlic cloves
  • 3 eggs
  • 100 g parmesan cheese, grated
  • 1 tsp black pepper, freshly ground
  • 1 tbsp olive oil
  • 1 tsp salt
  • 2 tbsp parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the diced pancetta and cook until crispy, about 5-6 minutes.

Step 3

Add the minced garlic and sliced baby bella mushrooms to the skillet with the pancetta. Sauté until the mushrooms are golden and tender, about 4-5 minutes. Remove the skillet from the heat.

Step 4

In a bowl, whisk together the eggs, grated parmesan cheese, and freshly ground black pepper until smooth and creamy. Set aside.

Step 5

Once the pasta is drained, immediately transfer it to the skillet with the pancetta and mushrooms. Toss to combine.

Step 6

Pour the egg and cheese mixture over the hot pasta, tossing quickly to create a creamy sauce. Add a splash of the reserved pasta water as needed to achieve desired sauce consistency.

Step 7

Taste and adjust seasoning with additional salt or pepper if needed.

Step 8

Serve immediately, garnished with chopped parsley for an optional fresh finish.
