Ingredients

  • 400 g Penne pasta
  • 150 g Pancetta (diced)
  • 2 large Eggs
  • 100 g Parmesan cheese (grated)
  • 200 ml Heavy cream
  • 100 g Mozzarella cheese (shredded)
  • 2 cloves Garlic (minced)
  • 1 tbsp Olive oil
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 2 tbsp Fresh parsley (chopped, optional for garnish)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Bring a large pot of salted water to a boil and cook the penne pasta until al dente, following the package instructions. Drain and set aside.

Step 3

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced pancetta and cook until crispy, about 5 minutes.

Step 4

Add the minced garlic to the skillet and sauté for 1 minute until fragrant. Remove the skillet from heat and set aside.

Step 5

In a medium bowl, whisk together the eggs, grated Parmesan cheese, and heavy cream. Season with a pinch of salt and black pepper.

Step 6

In a large mixing bowl, combine the cooked pasta, pancetta and garlic mixture, and the egg and cream sauce. Mix thoroughly to coat the pasta evenly.

Step 7

Transfer the pasta mixture to a greased or buttered baking dish. Spread it out into an even layer.

Sprinkle the shredded mozzarella cheese over the top of the pasta.
