  • 6 cups beef broth
  • 1 cup water
  • 2 tbsp tomato paste
  • 2 tsp caraway seeds
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 tsp salt
  • 0.5 tsp black pepper, freshly ground
  • 2 tbsp fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large soup pot or Dutch oven over medium-high heat.

Step 2

Season the beef cubes with a pinch of salt and pepper, then sear them in the pot in batches until browned on all sides. Remove and set aside.

In the same pot, add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute, stirring frequently.
