Ingredients

  • 1 medium-sized (about 2 lbs) butternut squash
  • 2 medium yellow onion
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves (optional)

Directions

Step 1

Peel the butternut squash, then cut it in half lengthwise and scoop out the seeds. Slice the squash into cubes about 1-inch big and set aside.

Step 2

Peel the yellow onions and cut them in half. Thinly slice the onion halves into slivers.

Step 3

In a large skillet or sauté pan, heat the olive oil and unsalted butter over medium heat until the butter is fully melted.

Step 4

Add the sliced onions to the pan and cook for 5-7 minutes, stirring occasionally, until they soften and begin to turn golden brown.

Step 5

Stir in the butternut squash cubes to the onions and toss to coat everything evenly in the oil and butter mixture. Spread the squash and onions into an even layer in the pan.

Step 6

Sprinkle the brown sugar, salt, and black pepper evenly over the squash and onions. Stir to mix well and allow the sugar to begin to caramelize.

Step 7

Cook for 15-20 minutes, stirring occasionally, until the squash is tender and both the squash and onions develop a deep golden caramelization.

Step 8

If using fresh thyme, sprinkle it over the dish in the last 2 minutes of cooking and stir gently to incorporate.

Step 9

Remove from heat and transfer to a serving dish. Serve warm as a side dish for any meal.
