Ingredients

  • 4 large Yellow onions
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 3 tablespoons Sherry (dry or sweet)
  • 1 teaspoon Brown sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 sprigs Fresh thyme (optional)

Directions

Step 1

Peel the onions, then slice them thinly into even rings or half-moons (about 1/4-inch thick).

Step 2

In a large, heavy-bottomed skillet or sauté pan, heat the butter and olive oil over medium heat until melted and bubbling.

Step 3

Add the sliced onions to the pan. Stir well to coat the onions evenly in the butter and oil.

Step 4

Sprinkle the salt over the onions, which will help draw out their moisture as they cook.

Step 5

Reduce the heat to low or medium-low, stirring occasionally to prevent sticking or burning. Allow the onions to cook slowly for about 30 minutes, until they soften and take on a golden-brown color.

Step 6

Once the onions are evenly caramelized, add the brown sugar and stir to combine. The sugar will enhance the onions' natural sweetness and help deepen their color.

Step 7

Increase the heat to medium and deglaze the pan with the sherry, using a wooden spoon to scrape up any browned bits stuck to the bottom. Stir continuously for about 3-5 minutes, until the sherry reduces and the onions are glossy.

Step 8

Season with black pepper and adjust the salt if needed.

Step 9

Optionally, stir in the sprigs of fresh thyme for added flavor in the last minute of cooking.

Step 10

Remove from heat and serve immediately as a topping or side dish. Enjoy!
