Ingredients

  • 600 grams Baby potatoes
  • 2 medium Yellow onions
  • 3 tablespoons Olive oil
  • 1 tablespoon Butter
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 2 tablespoons Red wine vinegar
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Wash the baby potatoes thoroughly and cut them in half. Leave the skins on for texture and flavor.

Step 2

Place the potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook for 10-12 minutes or until just fork-tender. Drain and set aside.

Step 3

Peel the onions and slice them into thin rings.

Heat 2 tablespoons of olive oil and the butter in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 10-15 minutes until golden and caramelized. If needed, reduce the heat to prevent burning.
