Ingredients

  • 500 grams Pork shoulder (thinly sliced)
  • 3 tablespoons Soy sauce
  • 2 tablespoons Fish sauce
  • 2 tablespoons Brown sugar
  • 3 cloves Garlic (minced)
  • 2 tablespoons Vegetable oil
  • 3 tablespoons Rice vinegar
  • 2 teaspoons Sugar
  • 1 medium Carrot (julienned)
  • 100 grams Daikon radish (julienned)
  • 4 tablespoons Mayonnaise
  • 2 tablespoons Sriracha sauce
  • 4 small Baguettes
  • 1 medium Cucumber (sliced into thin sticks)
  • 1 bunch Fresh cilantro
  • 1 medium Jalapeño (thinly sliced, optional)

Directions

Step 1

1. Prepare the quick pickled vegetables: In a small bowl, whisk together rice vinegar, sugar, and 1/4 teaspoon of salt until the sugar is dissolved. Add the julienned carrot and daikon radish, toss to coat, and set aside for at least 15 minutes. Drain before using.

Step 2

2. Marinate the pork: In a large bowl, combine the soy sauce, fish sauce, brown sugar, and minced garlic. Add the sliced pork and mix well to coat. Allow the pork to marinate for 10-15 minutes while you prepare the other ingredients.

Step 3

3. Make the spicy mayo: In a small bowl, mix together the mayonnaise and Sriracha. Adjust the spice level to taste and set aside.

Step 4

4. Cook the pork: Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated pork and cook for 5-7 minutes, stirring occasionally, until the pork is caramelized and cooked through. Remove from heat.

Step 5

5. Toast the baguette: Slice the baguettes lengthwise, but not all the way through, to create a pocket. Lightly toast them in an oven or on a skillet until warm and slightly crispy.

Step 6

6. Assemble the Banh Mi: Spread a generous layer of spicy mayo on the inside of each baguette. Add some cucumber sticks, pickled vegetables, caramelized pork, fresh cilantro, and jalapeño slices, if using.

Step 7

7. Serve: Press the baguette lightly to hold the filling in place. Serve immediately and enjoy your homemade Caramelized Pork Banh Mi!
