Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente, then reserve 1 cup of pasta water and drain the rest.
Peel the onions and thinly slice them into even strips.
In a large, heavy-bottomed skillet, heat the olive oil and butter over medium heat until melted.
Add the sliced onions and a pinch of salt to the pan. Stir to coat the onions in the oil and butter.
Reduce the heat to medium-low and cook the onions slowly, stirring occasionally, for 30-35 minutes, or until they are golden brown and caramelized. If the onions start to stick or brown too quickly, add a splash of water to the pan and reduce the heat further.
While the onions are caramelizing, mince the garlic cloves.
When the onions are caramelized, add the minced garlic and thyme to the skillet. Cook for another 1-2 minutes until fragrant.
Stir in the balsamic vinegar and a couple of tablespoons of the reserved pasta water to deglaze the pan. Scrape up any browned bits from the bottom of the skillet.
Add the cooked linguine to the skillet with the caramelized onions. Toss to coat, adding more reserved pasta water as needed to create a silky sauce.
Stir in the grated parmesan cheese until melted and evenly distributed. Taste and adjust seasoning with additional salt and freshly ground black pepper, if needed.
Serve the Caramelized Onions Linguine immediately, garnished with fresh parsley if desired.
