Ingredients

  • 12 oz linguine pasta
  • 4 large yellow onions
  • 3 tbsp olive oil

  • 0.5 cup parmesan cheese, grated
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp balsamic vinegar
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente, then reserve 1 cup of pasta water and drain the rest.

Step 2

Peel the onions and thinly slice them into even strips.

Step 3

In a large, heavy-bottomed skillet, heat the olive oil and butter over medium heat until melted.

Step 4

Add the sliced onions and a pinch of salt to the pan. Stir to coat the onions in the oil and butter.

Reduce the heat to medium-low and cook the onions slowly, stirring occasionally, for 30-35 minutes, or until they are golden brown and caramelized. If the onions start to stick or brown too quickly, add a splash of water to the pan and reduce the heat further.
