Ingredients

  • 2.5 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 0.5 cup Unsalted butter (cold, cubed)
  • 0.75 cup Sour cream
  • 2 pieces Large onions (thinly sliced)
  • 2 tablespoons Olive oil
  • 1 teaspoon Granulated sugar
  • 6 ounces Smoked salmon (chopped)
  • 0.5 cup Cream cheese (softened)
  • 1 tablespoon Fresh dill (chopped)
  • 1 piece Egg (beaten, for egg wash)

Directions

Step 1

In a large mixing bowl, combine the flour, baking powder, and salt.

Step 2

Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

Step 3

Stir in the sour cream and knead gently until a soft dough forms. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

Step 4

Heat the olive oil in a large skillet over medium heat. Add the thinly sliced onions and cook, stirring occasionally, for about 20-25 minutes or until the onions are golden brown and caramelized.

Step 5

Sprinkle the sugar over the onions, stir, and cook for an additional 2 minutes. Remove from heat and let cool.

Step 6

In a mixing bowl, combine the cooled caramelized onions, chopped smoked salmon, cream cheese, and fresh dill. Mix until well incorporated.

Step 7

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 8

On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Use a round cutter (approximately 4 inches in diameter) to cut out circles.

Step 9

Place a spoonful of the salmon-onion filling in the center of each dough circle. Fold the edges up and over the filling, pinching to seal and form a small pouch or half-moon shape.

Step 10

Place the knishes seam-side down on the prepared baking sheet. Brush the tops with the beaten egg for a golden glaze.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the knishes are golden brown and flaky.

Step 12

Let the knishes cool slightly before serving. Enjoy warm or at room temperature!
