Ingredients

  • 1 tablespoon Olive oil
  • 3 large Yellow onions
  • 1 teaspoon Sugar
  • 0.5 teaspoon Salt
  • 2 teaspoons Fresh thyme leaves
  • 1 sheet Store-bought puff pastry
  • 1 large Egg
  • 1 tablespoon Heavy cream
  • 0.25 cup Crumbled goat cheese (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the large yellow onions into thin rings.

Step 3

In a large skillet, heat the butter and olive oil over medium heat until melted.

Add the sliced onions, sugar, and salt to the skillet, stirring to coat the onions evenly.

Cook the onions on medium-low heat, stirring occasionally, for about 25-30 minutes, until deeply golden and caramelized. Add the fresh thyme leaves in the last few minutes of cooking. Remove from heat and set aside.

On a lightly floured surface, roll out the puff pastry sheet to smooth out creases. Use a 2.5-inch round cutter to cut out circles of dough. Re-roll scraps if needed to get more circles.
